The Suehiro Japanese Whetstone - New Cerax #3000 Grit (CR-3003-Y) is a fine-grade finishing stone designed to take your blade to a whole new level of sharpness. Grit progression is key to achieving a refined and superior sharpening edge.
This stone is recommended for use after the 800 and 1500 grit Cerax stones. It works exceptionally well on high-end blades, producing the beginning of a mirrored polished bevel known as a "cloudy mirror" finish. The size 3 model standard whetstone from Suehiro is suitable for a wide variety of knives and cutting tools. It comes with a storage case that can also be used as a whetstone stand. The size 3 stone is slightly smaller compared to the larger size 1 Cerax.
The Cerax Waterstone by Suehiro Niigata Japan is renowned for its fast cutting surface, longevity, and reputation for consistency and high quality. These stones hold their shape well and still cut quickly enough to create a burr in a reasonable number of strokes.
The Cerax Stones require soaking before use, but they are not excessively thirsty. A few minutes of soaking is sufficient, and an occasional splash of water during use keeps them working smoothly. It's important not to store the stones in water. Each Suehiro Cerax stone is mounted to a supporting plate, which can be positioned upright in the base unit for convenient use as a stone holder. Alternatively, the plate can be faced downward for storing the stone and lightly soaking it prior to use. The Cerax Whetstone comes with a small Nagura stone, used for unclogging the stone if particle material becomes embedded during the sharpening process.

The Suehiro Cerax series of stones may develop a dish after frequent usage. To maintain the stones and keep their surface flat for a long life, it is recommended to use a lapping plate. Suitable options for this process include the Jende Industries Glass Lapping Plate, Shapton Diamond Glass Lapping Plate, or the Shapton NAORU cast iron lapping system.
