This chef knife, created by Joel Davey, is a true work of art. Made with 26c3 high carbon steel, it boasts an acid etch finish that gives it a unique and striking appearance. The knife measures 340mm in overall length, with a 200mm blade that stands at an impressive 52mm at the heel. The blade has a 2mm thickness at the heel, which tapers down to a razor-thin 0.5mm edge.

The S grind has been sharpened to a precise 17-degree angle, making it ideal for a range of kitchen tasks. With a hardness of 63-64 HRC, this knife is built to last. The handle is made from a combination of dyed and stabilized oak bolster, 3000-year-old bog oak, and stainless spacer and pins.

The spacer has been meticulously recessed for an heirloom fit between each piece. Weighing in at 176g, this knife is both balanced and lightweight, making it a joy to use in the kitchen. Overall, this chef knife is a stunning piece that any chef would be proud to have in their collection.

 Joel is a knife maker based in Newcastle, New South Wales, Australia. With a passion for crafting high-quality knives, he has been making knives for the past 3 years. He specializes in hand-forged chef knives, but also enjoys experimenting with different styles such as daggers to challenge himself. Despite only being in the craft for a short time, he is currently awaiting assessment for the knife-making guild.


One of the things that sets Joel's knives apart is his attention to detail and the materials he chooses to work with. He has a particular fondness for working with 52100 steel, which he finds to be a challenging but rewarding steel to work with. He also enjoys pattern welding, using the classic combination of 1084/15n20 to create bold Damascus patterns.

When asked about his favourite piece he's ever made, Joel had a difficult time choosing just one. He mentioned that it was a toss-up between his Integral French Sabatier and his latest low layer Damascus San Mai knife with faceted handle pieces. Both pieces showcase his skill and attention to detail, making them stand out among his other creations.

Joel is a full-time knife maker, dedicating all of his time and energy to perfecting his craft. He may not have won any awards as of yet, but with his passion and dedication to knife-making, it's only a matter of time before he is recognized for his exceptional craftsmanship.
